Les crêpes français au cannabis ? Mais c’est incroyable !

Crêpes are a family tradition in my house. The first recipe my daughters learned to make themselves and a mainstay of every weekend. This quick and easy recipe is fun to make and wonderful with added cannabis ghee to give your day a kick.

Having spent almost twenty years living in Paris, crêpes took over as the street food I loved the best. There is nothing better late at night when you’re walking home from a night out with friends than a hot crêpe with ham, egg and cheese. I would always get a quick Nutella crêpe before going to the movies in Odéon, and Sunday brunch was usually in our neighborhood crêperie. Now that we’re back in the states, we make our own, and now that the girls are off at school, I like to jazz it up with a little cannabis ghee!

Some recipe hints and suggestions:

  • Make sure you tilt the pan and spread the batter out in a thin layer over the bottom of your pan. Unlike pancakes, crêpes are supposed to be ultra thin.

  • The dosage of these crêpes is pretty light so you can eat more than one without fear- because let’s face it: who can eat just one crêpe?

  • Here are some excellent topping ideas, but feel free to make up your own:

    • Nutella and sliced banana (A classic!)

    • Lemon and cane sugar

    • La complète : ham, egg and cheese

    • The Popeye: cooked spinach and goat cheese

    • La caprese : tomato, basil and mozzarella with a splash of olive oil

    • Berries and whipped cream

    • Ice cream, whipped cream, powdered sugar, cream cheese, frosting, jam, jelly, applesauce, canned peaches, fresh peaches, pecans and honey, maple syrup and butter, chocolate chips, chocolate sauce, butterscotch sauce and bananas…. Frankly, it’s ALL good!

  • If you are adding cheese to be melted, or egg to be fried, or any hot ingredient to your crêpe, make sure you cook both sides before adding your toppings.

  • This batter will last very nicely in the fridge for a few days, making it easy to make spontaneous crêpes for lunch or a quick snack.

  • Please be responsible and make sure everyone eating this infused ghee food, or any food made with canna ghee knows that they are eating cannabis. Surprises are not always fun when it comes to eating THC.

FRENCH CRÊPES AU CANNABIS 

WHAT YOU WILL NEED

INGREDIENTS:

2 EGGS

4 cups MILK (or the MILK SUBSTITUTE of your choice like SOY or OAT)

2 cups FLOUR

½ tsp. SALT

2 tbsp. melted cannabis infused ghee*

2 tbsp. butter for the pan

*For lighter crêpes, swap this out for one tbsp. infused ghee and 1 tbsp. neutral vegetable oil (like rapeseed or sunflower). You can find out how to make your own cannabis ghee using our easy recipe or try our Green Gold cannabis ghee!

KITCHEN STUFF:

A medium to large mixing bowl

A wire whisk (or a fork if you’re desperate)

Measuring cup and measuring spoons

A cast iron skillet or non-stick pan

 

COOKING INSTRUCTIONS

Whisk your eggs into your milk until they are totally combined. Adding it a half-cup at a time, gently but firmly whisk the flour into your milk. Once that is completely incorporated add the salt and the ghee and whisk that in as well.

Let sit for 10 minutes. During this time, get your pan nice and hot over a medium flame. This will take longer for the cast iron than for a non-stick.

Once your pan is hot, do a test crêpe. (Remember: the first crêpe is always a weirdo so don’t worry if it isn’t perfect.)

Melt a sliver of butter in the pan. It should sizzle but not turn brown. Pour about a third cup of batter into the center of the pan. It should sizzle gently. Using the handle of the pan, tilt slightly to make sure the batter slides to cover all of the bottom. Let cook. When the center looks dry, the crêpe is ready to flip.

Cook for a minute or two on the other side.

Repeat for each crêpe.

Variations: When making crêpes with eggs or other warm toppings, cook both sides of the crêpe before adding your topping. The egg will cook better if you let them sit in a bowl full of hot tap water before cracking them onto your crêpe. You can fold in the sides of your crêpe to help make the cheese melt faster, too. Like a little crêpe burrito!

Put whatever batter you don’t use in a closed container in the fridge for quick crêpes at a later date!

MAKES 12-15 crêpes

SERVING SIZE:

2 crêpes*

*If you are using THC-rich infused ghee, two crêpes should make you nicely stoned depending on how strong your infused ghee is, but not unhappily so. If you are unsure of your ghee’s THC potency, do a test run or make your crêpes using the “lighter” method mentioned in the ingredients section above. Better safe than sorry!
