SIMPLY THE BEST GLUTEN FREE POT BROWNIES YOU WILL EVER EAT
A gluten-free option was the number one request I have gotten for brownies, so here you are! I have a lot of friends who need to avoid gluten, or have Celiac disease and they are always moping about their lack of yummy dessert options- with reason!! A brownie just isn’t a brownie unless it is chocked full of creamy chocolaty goodness, so I tested this variation MANY times to make sure these brownies turned out as smooth, creamy, rich and chewy as usual. Enjoy!
You can make it with a strong hemp ghee / clarified butter, and then cut it up into tiny pieces and keep them in the freezer for when needed, or you can use a lighter dose of cannabis butter and serve them “full sized” to your friends. Either way, be careful! These brownies are so good it’s easy to eat more than your usual dose.
Making these with a CBD-rich hemp ghee is amazing, too! CBD Brownies are one of my favorite things. I never thought brownies could be better than they already were until I first made a batch with CBD! It’s like your brownies were kissed by angels! (You’ll know what I mean once you eat one!)

Some recipe hints and suggestions:
Do not over-cook! When in doubt, take these brownies out of the oven and let them set. Better too gooey than too dry.
This particular recipe is best when cool, but to each her/his own! I have served them warm with ice cream and it was very nice
This recipe freezes well and will defrost on the counter in minutes. Unless you are throwing a super huge party, I would suggest that you chop up your brownies, throw them in a Ziploc, and freeze them. Pull out a dose when you’re ready to imbibe and enjoy your high. They take seconds to defrost and will last for well over 6 months in your freezer.
As always, if you are making this recipe with THC-rich hemp, please test a small portion before going for a large portion and make sure your dosage is not to strong!

GLUTEN FREE CANNABIS FUDGE BROWNIES
(POT BROWNIES WITH NO GLUTEN!)
WHAT YOU WILL NEED
INGREDIENTS:
150g / 5.25oz SEMI-SWEET DARK BAKING CHOCOLATE
64g / ¼ cup CANNABIS GHEE (hemp-infused clarified butter)
57g / ¼ cup BUTTER
1 tbsp. WATER
243g / 1 c. SUGAR
2 tbsp. COCOA POWDER
1 tsp. VANILLA
3 EGGS
115g / ¾ c. RICE FLOUR
¼ tsp. SALT
NOTE FOR STRONGER BROWNIES:
Replace the ¼ cup of butter by another ¼ cup of hemp ghee and a tablespoon of water. These will make your brownies EXPONENTIALLY STRONGER!!!
KITCHEN STUFF:
8 x 8 inch / 20 x 20 cm Baking pan
2 pots (one slightly smaller than the other) or a double boiler
Rubber spatula
Medium sized mixing bowl
Small bowl
Parchment Paper
COOKING INSTRUCTIONS
Before you start, preheat your oven to 350°F / 180°C.
Line the bottom of your baking pan with parchment paper and butter the sides lightly.
Break up the chocolate and the butter and put them and the hemp ghee and water into the smaller pot (or the top half of the double boiler). Pour boiling water into the larger pot, (or double boiler bottom half), and place the smaller pot into it. Mixing from time to time with a rubber spatula, let all of these ingredients melt together until you get a nice smooth chocolaty mixture. Though it is tempting DO NOT dip in your finger for a taste!
In a separate medium sized mixing bowl, mix sugar, cocoa powder. Add the eggs and the vanilla and mix well.
In a small bowl, mix salt and flour.
Add the chocolate mixture to the egg mixture, making sure to really scrap down the sides of your pot with the spatula. (Do not lick the pot!) Using the spatula, fold the chocolate into the egg and then add the flour mixture. Mix until nicely incorporated but don’t go crazy.
Pour your batter into your prepared baking pan and use the spatula to get all the chocolatey goodness out of you mixing bowl. Try not to lick the spatula when you are done- keep in mind if you do that YOU WILL GET HIGH.
Bake in the center rack for 20-25 min. Test in the middle for doneness with a toothpick. If the toothpick comes out almost clean, but still a little greasy/crumby, BROWNIES ARE DONE!
Do not over-bake.
SERVING SIZE:
This depends on how strong you made them!
If you are using my CBD or CBG rich ghee recipe, you can cut the brownie into 8 servings. Each piece will contain approximately 10-12 mg of CBD. This will double if you make the STRONGER BROWNIE VARIATION.
If you are using THC-rich ghee made following my hemp ghee recipe, then your ghee should be around 2 mg/ml of THC potency. This will vary immensely depending on the how strong your weed is. You can find more about this in my Cooking with Hemp Ghee Guide (coming soon!).
If you follow the brownie recipe as is, I would suggest cutting your brownie into AT LEAST 25 servings (approx. 1 inch X 1 inch squares or 2.5cm X 2.5cm) and I, personally, would test them out at half that amount.
If you used the STONGER BROWNIE VARIATION, you should consider that your serving size is approximately 1/8 that amount. That means cut your 1 piece in half and then in half again, and then cut all of those pieces in half, leaving you with ½ inch squared pieces or 64-128 servings depending on how stoned you like to be.
